Spanish AND delicious.
Salchichon is the rival to the French saucisson. From both sides of the border the origin of this regional salami is disputed. It's made in a similar manner to chorizo, but without the traditional pimenton & heat. Everything else stays the same - salt and whole peppercorns, grated nutmeg and a pinch of coriander. Works well with Spanish cheese, membrillo and roasted peppers.
