This cut has got it all. It’s cooked on the bone, adding flavour; it’s tender, coming from the middle of the animal; it has delicious crackling and a beautiful thin layer of fat that sits beneath the skin. A pork rack can include up to eight ribs and make a terrific roast or can be separated into individual cutlets which are great for pan frying or grilling on the BBQ.
NB: One cutlet weighs approximately 250g
Try it:
- Crusted with basil & parmesan and roasted with smashed potatoes
- Glazed in a bourbon and BBQ sauce
- Middle Eastern style, with spiced chick peas, fennel and egg plant
Sourced from Nerriga, Braidwood, Moruya and slightly further south; our pork is free range and pasture-raised. Happy, stress-free pigs forage and root amongst the trees and open pasture whilst having access to nutritionally balanced feed of grains, protein, minerals and kelp powder, (because pigs can’t live on grass alone…) This makes for beautifully delicious meats.
