If there was one cut of lamb that is sneaky-amazing in it's under-cover awesomeness? It's lamb leg chops.
More meat than a forequarter, less bone than chump, minimal fat and loads of taste; perfect for the BBQ, pan-frying or grilling. They work fabulously in casseroles and slow roasts and can handle both delicate and stronger flavours.
They are the perfect substitute for forequarter chops (more meat) and short loin (more economical)
What more can you possibly ask for?
Note: a 1kg of lamb leg chops will get you approx 3-4 chops.
- Smokey Spanish Style with a dry rub of paprika, oregano and lemon zest, served with green bean and egg salad;
- Chargrilled with ginger and garlic, served with Asian greens in an oyster sauce marinade
- With flavours of India: garam marsala, cinnamon and ginger, chargrilled and served with tomatoes, lemon and yoghurt.
