
Leeks
Leeks: the majestic, titan of the onion family.
Leeks: Like garlic and onion, leeks are a member of the allium family, but have their own distinct flavour when cooked: delicate, like a mild onion with a hint of sweetness. Two thirds of their length is white and firm, and this is the part that is mainly eaten. The rest is made up of the leaves (flags), which can be used in stocks or casseroles - or literally any other dish.... If it's leek...it's gooood.
Availability: All year round.
Steam, pan-fry or add to casseroles, tarts, pies and soups.
Sourced locally across the Shoalhaven, Far South Coast and a little from farmers in the Illawarra. They are grown under clear skies and fresh air; hot sunny Summers and frosty Winters.
Our farmers use permaculture principles and their sowing, weeding and harvesting is all done by hand, without the use of chemicals, pesticides or herbicides preferring green manure crops, compost and natural minerals for biological soil balancing.
