A cut that come from shin or the heel muscle in the silverside. A muscle that is used constantly for movement, it contains a high amount of connective tissue and need long, slow cooking with liquid (like casseroling or braising) to give its distinctive tender texture and rich, full bodied flavour.
Osso Bucco is the bone-in version of this, from the bottom portion of either the front or rear leg.
Perfect for curries and stews, pies and pot roasts
- In a master recipe casserole with thyme and Worcestershire sauce;
- Slow Cooked until fall-apart tender and served with Gnocchi;
- In a hot pot with golden puff pastry;
- Braised with roasted capsicum and eggplant.
