Chinese Five Spice
20g (Equivalent to a standard spice jar)
The sweet tones of star anise, cloves and cinnamon, with a bite of Szechwan pepper, and all married together with ground fennel seeds; you'll be wondering what you ever used before you discovered it.
A mixture of five spices blended together, used primarily in Chinese cuisine but also used in other Asian and Arabic cookery.
Used in many Asian recipes, its sweet tangy flavour goes well with richer meats like pork and duck. Stir-fried vegetables are enhanced by a sprinkling over them when cooking; or add a little salt and it makes an excellent spice rub for chicken, duck, pork and seafood.
Interesting side note: It is often used in a technique called “flavour potting”, where meat is steeped in a rich sauce and cooked for long hours. YUM.
