Shallots or Green Onions:  NOT just an instrumental composition recorded in 1962 by Booker T. & the M.G.'s....also a delicious vegetable!

If you’ve ever been confused by what type of onion to use in a recipe, you aren’t alone. The names for these vegetables vary depending on the cookbook you read, the supermarket you visit or the person you ask...in this instance, we are referring to a scallion or green onion - what we know as a Shallot.

They are in fact very young onions, harvested before the bulb has had a chance to swell. Both the long, slender green tops and the small white bulb are edible, and are good either raw or cooked. They have a similar flavour to onions, but are much milder.

Availability: All year round.

Sourced locally across the Shoalhaven, Far South Coast and a little from farmers in the Illawarra. They are grown under clear skies and fresh air; hot sunny Summers and frosty Winters.

Our farmers use permaculture principles and their sowing, weeding and harvesting is all done by hand, without the use of  chemicals, pesticides or herbicides preferring green manure crops, compost and natural minerals for biological soil balancing.
