Brussel Sprouts: Miniature cabbages, but better....or full sized cabbages if you are a Borrower...

The quintessential roast-dinner vege; brussels sprouts are thought to have been cultivated in Belgium in the 16th century, hence the name. Although they're related to cabbage (they even look like a miniature, compact version) they have a sweet, nutty flavour and grow in multiple rows along a thick central stalk.

Stir-fry in oil with onions and ginger, add to cooked chestnuts for proper-roast-dinner; or boil until al dente (firm to the bite) and quickly pan-fry with diced pancetta and chopped garlic.

Sourced locally across the Shoalhaven, Far South Coast and a little from farmers in the Illawarra. They are grown under clear skies and fresh air; hot sunny Summers and frosty Winters.

Our farmers use permaculture principles and their sowing, weeding and harvesting is all done by hand, without the use of  chemicals, pesticides or herbicides preferring green manure crops, compost and natural minerals for biological soil balancing.
