Eye fillet is a premium cut as it does the least amount of work on the animal. It sits along the spine of the animal and contains the least amount of connective tissue.
It is beautiful oven roasted and served medium rare as Chateaubriand with a béarnaise sauce, or cut into steaks for barbecue or pan-fry dishes. It can also be cut into strips for stir-fries.
- Impressing the hordes with a roast and a rich wine sauce that are unbelievably good together;
- Indonesian Style with a gado-gado salad and steamed Himalayan red rice;
- Smoking it and serving carpaccio-style with a mustard dressing and baby rocket;
- Roasting with fresh rosemary and garlic, serve with horseradish and roast veggies
